Last week when I was looking for new flavour combinations to try I came across one that for some reason I overlooked before – pear and chocolate. There is a huge number of recipes based on these two ingredients, but for me to know the potential of this match it had to withstand the crumble challenge.
I have one go to crumble pie/bar recipe that I have used before in this apple and cranberry crumble pie and this blueberry pie. Now, there is one more to be added to this collection! It is such a simple recipe that it all comes down to the flavours used and, you know what, I’m sold. While apple and cranberry is a perfect match for the winter festive season, these pear and chocolate chip bars are an all year round treat. In these bars chocolate perfectly highlights the flavour of pear without overpowering it, creating a perfect dessert that you’ll want to have after each meal. I might be guilty of that already…
PEAR AND CHOCOLATE CHIP CRUMBLE BARS
Crust and topping
230g all purpose flour
160g granulated sugar
a pinch of salt
160g cold butter, cubed
80g chocolate chips
4 small pears, cubed
130g granulated sugar
50g all purpose flour
125ml plain yogurt
- Either grease or line with baking paper a 20x30cm sized pan. Preheat oven to 170°C.
- In a medium sized bowl using your hands rub together flour, sugar, butter and salt until fine crumbs. Take about 1 cup of this mixture and set aside. Press the remaining mixture into the bottom of the prepared pan and bake for 15 minutes or until light golden in colour.
- In the meantime prepare the filling by combining slightly beaten eggs with sugar, flour and plain yogurt. Fold in the chopped pears. Pour this over the baked base and distribute the fruit evenly across the pan.
- Take the remaining crumble mixture and mix it with chocolate chips. Sprinkle on top and bake for 1 hour or until the crumble is golden in colour.
